Having worked with his Uncle and Grandfather in Sydney restaurants during school holidays, Biggs discovered a desire to work in the Food and Beverage industry. Hailing from Hobart Tasmania, Biggs has lived and worked around the world in a myriad of segments in the Food and Beverage industry; Adrian is Training Manager at Bacardi USA and has over 15 years of food and beverage experience, spanning every aspect of the industry from convention centers to cocktail bars. Method: Shake and double strain
Garnish: Pear fan and rosemary sprig
3 cl Disaronno
6 cl organic pear purée
6 cl Martini & Rossi Prosecco
2 dashes lemon bitters
2 springs rosemary
In the shaker muddle rosemary, combine other ingredients, except prosecco. Shake vigorously. Add prosecco and strain in a cocktail glass over crushed ice. Garnish with pear fan and rosemary sprig.
