Quinta do Sobral Estate is located in the heart of the Dão Region , in the village of Santar, historical heritage of this region and was founded in 1997. Here they preserve a traditional 12-acres vineyard planted on poor granite soils in the midst of pine forests, with towering eucalyptus and olive trees, with the grape varieties of the region.
According to the producer of wine can be stored for 10-15 years in the right conditions and the optimum degree of maturity is 2-4 years. The harvest was hand-picked by the third week of September and the grapes are macerated for 24 hours at low temperature, prior to 15 days of fermentation. Maturation is made in French oak barrels for 12 months. After that, a minimum of 12 months maturation in the bottle.

Taste: Fresh, with black and fruits and fine spices. Solid, consistent, with acidic and harmonious tannins, very attractive and well laid out.
Ideally wine to mutton, lamb, beef, casseroles and grilled food.
